Last night we had a call on the house party app with our best friends. It’s an app that allows you to have about 4-5 people on a video call. We scheduled it earlier in the day, so we would have something to look forward to on a Friday night. “Pour a glass of wine and get your appetizers ready and let’s have happy hour together” we said. Somehow knowing that even though we can’t get together in person, having conversation over video would be fun. While we talked and laughed back and forth, seeing them sitting at their kitchen table made things feel safe and somewhat normal, which felt good.
As we chatted about how our jobs have changed and how our lives have taken a shift, it was a comforting feeling that we each knew exactly what the other was going through. They totally understood our life, and we understood theirs, more than ever. Our friendship connection felt deeper than ever before.
They mentioned that they needed eggs, and we reminded them that we have backyard chickens. As we continued to chat, his mom came into the kitchen to get something. She waved in the background and I mentioned that if we gave them some eggs, could she make us her famous homemade flan that we love so much. She immediately said yes and started making it right then and there. She has made it for years and always has the ingredients on hand. Our friend's camera instantly got turned around and focused on her as she shared the recipe with us as she mixed everything together, one can of condensed milk, 3 eggs, milk, etc. The mixer whirled around and you could tell by her body language that she had made the recipe 100 times over.
The feeling that we are going back to the basics of humanity flooded my thoughts. Sharing life with one another is beautiful. This quarantine has been challenging but I feel like it has brought people together more than ever. Finding new ways to connect is crucial and needed during this time. Humans need community, end of story.
This morning we had a beautiful homemade flan, made with love delivered to our door. We had a dozen fresh brown egg, ready for the exchange.

Flan Recipe
3 eggs
1 can of sweetened condensed milk
2 cups of milk
1 shot of baileys or vanilla extract
2 tablespoons of sugar
First you spray a glass dish with non stick spray.
Take 2 tablespoons of sugar and drop them into the dish with a tiny splash of water. Microwave the dish for 2.5 minutes. You want the sugar to caramelize. Set aside
In your blender put 2 cups of milk, 1 can of sweetened condensed milk, a tablespoon of vanilla or your favorite liquor and the 3 eggs. Blend it well for a couple of minutes.
Pour the blended mixture into the caramelized dish. Set the dish onto a baking sheet that has some water in it. Place it in the oven at 350 for an hour. Pull it out of the oven and set aside to cool off for another hour. Once cooled off take a knife around the edges of the flan. Wrap the top with cellophane and store in the fridge overnight.
When you are ready to enjoy carefully invert it onto a dish. All of the caramelized sugar will be on top and enjoy.
